Can you make my humbuckers do single-coil sounds?

If they're four-conductor, yes — coil-splitting adds convincing single-coil tones with one push-pull pot, no extra holes drilled.

Why does my guitar hum until I touch the strings?

That's a grounding/shielding issue, and it's fixable. Full cavity shielding plus a proper ground scheme kills the noise without changing your tone.
